WHAT IS THE SHELF LIFE OF YOUR CARAMELS?

We make our products in small batches with fresh natural ingredients and no preservatives. We send them out within a week or two of getting made so that they are as fresh as possible for you. They are pretty stable and should be good for a month or two. But hurry and eat them– they are best when they are fresh. Found a leftover box from last Christmas that you forgot that you had? Don’t worry– they are probably still fine. In fact, we once found one in an old backpack that we hadn’t used for a couple of years, and you know what? It wasn’t that bad… (but they’re still better fresh…)

 

WHAT IS THE SHELF LIFE OF YOUR ALMONDS?

The honey roasted almonds are a little finicky. They can sometimes get sticky after a month or two. They still taste good (addictingly good actually), but they aren’t as crunchy. So eat them up fast. And don’t store them where it is too hot or too cold.

 

MY HONEY HAS GONE HARD. HAS IT GONE BAD?

No! Honey can be good for decades, and maybe even centuries. (They have found edible honey in Egyptian tombs after all.) However, because it is raw fresh honey, it will probably crystallize on you. Don’t worry– this is a natural process. You can always bring it back to liquid form by putting the jar in hot (not boiling) water.

 

DO YOU ADD ANY SYRUPS OR SUGAR TO YOUR HONEY?

No way! Our honey is 100% pure honey straight from the hive. No syrups, water, or anything else is added to the honey. We feel like that would be ruining the product, as well as being dishonest. As you may know, there is an international racket of adulterated and counterfeit honey, as well as honey that has antibiotics that are prohibited for human consumption. Much of this comes from outside the U.S., but some of it is produced in the U.S. When syrups are sold as honey, it hurts beekeepers and puts them out of business.

In order to start to combat these problems, a team of scientists from the FDA are working on developing spectroscopic methods (FTIR and near IR) and a chromatographic method (GC-IRMS) to detect fake and adulterated honeys. In 2019, they contacted us to get samples to use as a baseline for what “authentic” honey is supposed to be. That’s right– the FDA is using OUR HONEY to define what is real honey. That is awesome!

I ORDERED AN ASSORTED BOX. HOW DO I TELL THE FLAVORS APART?

An assorted box is a fun and tasty adventure. There are usually 2-3 of each flavor, and sometimes it is a bit tricky trying to figure out which is which. You can usually identify the chocolate and almond ones right away. The raspberry ones have little bits of raspberries that you can see. The ginger ones have grated ginger, but it is sometimes hard to see– they have a strong ginger smell, though. The most difficult to tell apart are the plain and salted ones– the salted ones have salt crystals on one of the long sides of the caramel, and you can usually taste it. In the end, you might have to taste them to figure it out. It’s a tough job, but we know you are up to it. Enjoy!

WHAT IF I WANT TO DO SOMETHING DIFFERENT THAN WHAT IS ON YOUR WEBSITE?

Need something a little different than what is available on our website? No worries! We can switch up the number of caramels in either bags or boxes. We have done bags with only 2 caramels, and boxes with a whole pound of caramels. Want a bag with 3 Almond caramels and 1 Chocolate caramel? We can do it! We are happy to work with you to get you what you want and need.

And if you really want to go crazy, we can even personalize the labels (for a small fee) for bags, boxes, lip balms, whatever. So go ahead– slap your business logo on some lip balms and start giving them out to customers. It’s fun!
